Baja Express Assistant Manager

General Summary:
Baja Express is a Mexican restaurant located on the Pechanga property which offers a variety of burritos, tacos and authentic Native American food. The Assistant Manager is responsible for overseeing the daily operations and serves as part of the management team. The Supervisor is an integral part of the team and provides excellent customer service while promoting a warm and trusting environment with team members and customers. Baja Express is open seven days a week for breakfast, lunch and dinner. This
position requires the individual to have great attendance and be flexible to work all shifts including nights, weekends, and holidays.

Duties and Responsibilities:
Open and Close Daily
• Performs a walk thru of the restaurant to ensure equipment is working, adequate staffing and
proper levels of products.
• Checks emails, organizes and sets the line-up for each work station.
• Greets team members and organizes a pre-shift meeting and provide updates to team members
to prepare for the day/shift.
• Greets guests and creates a welcoming atmosphere.
• Ensures all staff is accounted for, checks uniforms, and ensures hygiene standards are
maintained.
• Performs food temperature and safety checks throughout the day.
• Follows up with team members to ensure standards are being met and provides direction and
guidance as needed.
• Collects daily deposits, reconciles paperwork (for the previous day) and gets change from Gas
Station.
• Report all suspicious activity including counterfeit currency, potential theft and safety or emergency concerns to management if/when they occur.

Inventory:
• Inventories products daily and monthly to prepare prep and pull charts.
• Prepares food orders for vendors.
• Pick up supplies on occasion.

Managing, Coaching, Training
• Fosters awareness of the importance of the company culture and supports core values.
• Creates and manages schedules for Supervisor, team members and Leads
• Reviews payroll and manage attendance on system.
• Audits team members training folders to ensure they are up-to-date.
• Establishes and maintain cooperative and effective working relationships with team members.
• Interviews potential candidates.
• Supervises organization and cleanliness of the property at all times (counters, POS and credit card
station, tables, chairs, walls, patio, restrooms, sweep and mop floors inside and outside and
remove trash)
• Maintains and oversees team member, Leads and Supervisor hygiene (washing hands and
sanitizing work stations) throughout the shift.
• Assists store manager to conduct performance reviews, team member notices and corrective
actions.
• Responds and provides solutions to customer and team member concerns.
• Writes and submits incident report (customer and team member) as needed.
• Facilitates all training for new and existing team members.
• Develops and delegates responsibilities to shift managers.
• Adheres to Company Policies and Procedures.

Support as needed:
• Maintains detailed menu knowledge and promotes premium and highlights the differences in our premium items.
• Professionally takes guests orders and ensures accuracy and processes the payment at the front
register and/or drive thru and third party vendors (doordash, postmates, etc.)
• Processes team member meals according to company cash handling procedures.
• Processes various cash handling procedures (credit cards, gift cards, cash) and policies to remain in compliance.
• Prepares customized food and drinks according specifications to ensure quality and presentation
• Prepares and maintains the EXPO station to ensure food is properly packed according to
standards.
• Prepares and stocks work station with accurate ingredients and supplies according to standards.
• Ensures the refrigerators and freezers are on and accurately maintained at the correct
temperatures to ensure food is fresh.
• Maintains and portions sauces (condiments), refills ice, and drive-thru refrigerator.
• Follows prep chart and prepare items for the day (condiments, vegetables and meats).
• Prepares labels for pans and stores them as appropriate.
• Prepares food according to standards and works quickly and efficiently.
• Maintains a clean and organized work area at all times (counters, grills, fryers, cold table).
• Provides team work by helping other areas as needed (kitchen, cashiers, prep ).
• Ensures the refrigerators and freezers are on and accurately maintained at the correct
temperatures to ensure food is fresh.
• Prepares and maintains utensils and ensures each work station is clean and sanitized.
• Perform additional duties as assigned by Management.

Education and Experience:
• High school diploma or equivalent
• Minimum of three (3) years food and hospitality experience.
• Great interpersonal and organizational skills.
• Excellent communication skills with a team player attitude.
• Strong attention to detail and works calmly and effectively under pressure.
• Ability to take initiative, and hold people accountable.
• Strong customer service and conflict resolution skills.
• Must have valid driver’s license with no restrictions.
• Ability to perform basic mathematical computations.
• Cash handling, point-of-service and system application experience preferred.
• Teachable and flexible to changes.
